Jerusalem Artichoke Soup

2 lbs (900 g) jerusalem artichokes, well scrubbed

3 cups water

6 cups chicken-style broth

3 cloves garlic, smashed

1 cup thinly sliced green onions

2 teaspoons dried dill weed

salt and pepper

 

 

1. Bring water to a boil add artichokes and simmer for 40 minutes or

until tender. Drain and discard the water.

 

2. Cool artichokes and peel, then mash.

 

3 . Place mashed artichokes back into the saucepan stir in the

chicken-style broth, garlic, and green onions. Simmer for 15 minutes.

 

4. Season to taste. Garnish with dill and serve.

 

 

Serves 4.
