Lemon Sweet Butter Jerusalem Artichokes(Sun Chokes)

2 lbs (900 g) jerusalem artichokes, scrubbed and cut 1/4 " (6mm) rounds

1 teaspoon salt

4 quarts (3.75 litres) water

1/4 cup olive oil

1/4 cup lemon juice

1/2 cup vegan margarine

2 teaspoons sugar

1/2 cup water

 

 

1. In large saucepan add salt and 4 quarts/litres of water. Bring to boil.

 

2. Add artichokes. Boil five minutes. Drain in colandar.

 

3. In large frying pan, add olive oil and heat.

 

4. Add drained artichokes. Saute. Turning with spatula until sides are

lightly browned. Remove from pan and set aside.

 

5. Add lemon juice, margarine and sugar to frying pan. Gently simmer.

 

6. Add 1/2 cup water, stir to mix. Add fried artichokes. Toss to cover

with Lemon Sweet Butter Sauce. Cook five minutes at simmer.

 

 

 

Serves 8.
