Guest guest Posted June 17, 2007 Report Share Posted June 17, 2007 Mango and Grapefruit Salad Fresh citrus juice and maple syrup pair up in a dressing that's drizzled over slices of mango and grapefruit. SALAD 2 large ripe mangoes 2 large red grapefruit DRESSING 1/2 cup fresh grapefruit juice 1/2 cup fresh orange juice 1/4 cup fresh lime juice 1/4 cup maple syrup Dash salt 1/2 teaspoon ground ginger 1 generous tablespoon chopped fresh herbs (chives, cilantro or parsley), plus extra sprigs for garnish METHOD 1. Slice off bottoms of each mango to stabilize. Using knife or vegetable peeler, peel around mango from top down. Stand mango on flat base; cut off two flat sides from large pit. Cut each mango half into diagonal slices, about 1/4-inch wide. 2. Cut top and bottom off each grapefruit. Following contour of grapefruit, cut away peel and outer membrane in several downward slices around fruit. Trim away any small pieces of white membrane. Cut grapefruit segments out of surrounding membranes. When all segments have been removed, squeeze membrane over bowl to capture juice; reserve juice for dressing. 3. Spread fruit over platter, alternating mango and grapefruit slices. Cover fruit; refrigerate. 4. To prepare dressing, add orange and lime juices to grapefruit juice. Whisk in maple syrup.
