Gingered Jerusalem Artichokes

Source: Recipezaar (adapted).

 

 

1 lb (450 g) jerusalem artichokes

1 tablespoon (3 tsp) vegan margarine -OR- oil

2 teaspoons grated fresh ginger

1/4 cup sherry -OR- apple juice

salt and pepper to taste

 

 

1. Scrub Jerusalem artichokes, slice 1/4 " (6 mm) thick.

 

2. In a large skillet cook and stir artichokes in hot margarine over

medium heat for 5 to 6 minutes or until crisp tender.

 

3. Add ginger, cook for 30 seconds, remove from heat.

 

4. Stir in sherry or apple juice. Season to taste with salt and pepper.

 

 

Serves 4.
