Guest guest Posted June 17, 2007 Report Share Posted June 17, 2007 Gingered Jerusalem Artichokes Source: Recipezaar (adapted). 1 lb (450 g) jerusalem artichokes 1 tablespoon (3 tsp) vegan margarine -OR- oil 2 teaspoons grated fresh ginger 1/4 cup sherry -OR- apple juice salt and pepper to taste 1. Scrub Jerusalem artichokes, slice 1/4 " (6 mm) thick. 2. In a large skillet cook and stir artichokes in hot margarine over medium heat for 5 to 6 minutes or until crisp tender. 3.
