Guest guest Posted June 11, 2007 Report Share Posted June 11, 2007 Amazing Whole Grain Waffles Source: 3abn.org (adapted to gluten free) 1/4 c. cornmeal + 1/2 c. water 3 c. water 1/4 c. Country Life Soy Supreme powder* 1/2 tsp. salt 2 c. quinoa flakes 1/4 c. raw brazil nuts 1. Microwave cornmeal and 1/2 cup cold water until water is absorbed and cornmeal begins to thicken - approximately 1 - 2 minutes, depending on your microwave. You could also cook the mixture in a small saucepan on the stove top until it thickens. 2. Blend the cooked cornmeal with the rest of the ingredients until smooth. Pour batter into hot waffle iron and bake 8 - 10 minutes depending on your waffle iron. 3. Cool in a single layer on a wire rack. *Please read label on the Country Life Soy Supreme powder.
