Guest guest Posted June 10, 2007 Report Share Posted June 10, 2007 Quinoa Black Bean Salad 1/3 cup quinoa, dry 1 cup water 4 tsp. lime juice, fresh 1/4 tsp. cumin, ground 1/4 tsp. coriander, ground 1 Tbsp. cilantro, fresh, chopped 2 Tbsp. scallions, minced 1 1/2 cups black beans, cooked 2 cups tomatoes, diced (fresh or canned) 1 cup red bell pepper, diced 2 tsp. green chiles, minced salt to taste Rinse quinoa. Boil the water, add quinoa, cover, and simmer about 10-15 minutes, until all the water is absorbed. Cool 15 minutes. Combine lime juice, cumin, coriander, cilantro, and scallions.
