Guest guest Posted May 19, 2007 Report Share Posted May 19, 2007 Potato Salad (Swedish) Source: Encyclopedia of European Cooking 8 medium potatoes 6 tablespoons (90 ml) oil 2 tablcspoons (30 ml) vinegar 1 teaspoon salt freshly ground pepper 1 small onion 1 teaspoon chopped chives 2 teaspoons chopped parsley Boil potatoes in their skins. Test with a fork to see they are done. Pour off water and hold pot over flame to dry them a little. Place in dish and cool. Peel and cut into slices. Mix vinegar, oil, salt and pepper in and stir well. Let the salad stand for 30 minutes, stirring occasionally a salad bowl. Chop onion finely and stir into salad sauce. Add potatoes so that sauce is absorbed by potatoes. When ready to serve, mix in chopped chives and parsley and add a little fresh pepper to taste.
