Guest guest Posted May 19, 2007 Report Share Posted May 19, 2007 French Beans with Mushrooms (Russia) Source: Encyclopedia of European Cooking (adapted) 1 1/2 Ib (675 g) French beans 1 gill (5 fl oz) (140 ml) water 8 oz (225 g) mushrooms 2 tablespoons (6 tsp) vegan margarine -OR- oil 1/2teaspoon salt 1 gill (5 fl oz) (140 ml) thick vegan sour cream parsley Wash and slice the beans, put into boiling, salted water, cover with a lid and cook until tender. Wash and slice the mushrooms, fry lightly in margarine, sprinkle with salt, add 2 tablespoons (30 ml) of the water in which the beans were cooked and simmer for 5 minutes.
