Guest guest Posted May 19, 2007 Report Share Posted May 19, 2007 Mushroom and Tomato Sauce (Italy) 1 Ib (450 g) mushrooms 1 clove garlic, crushed 3 tablespoons (45 ml) olive oil 1 medium sized can tomatoes pinch chopped thyme pinch salt cayenne pepper 1 tablespoon chopped basil, -OR- finely chopped mint -OR- parsley Heat oil and in it allow the crushed garlic to brown; add mushrooms,, sliced finely, and simmer for 10 minutes; pass tomatoes through a sieve, and add to the sauce together with the remaining ingredients. Cover and allow to cook very slowly for an hour, stirring from time to time Serve very hot as a sauce with any type of pasta. Sufficient for 6 people.
