Guest guest Posted May 19, 2007 Report Share Posted May 19, 2007 Salade de Laitues (Lettuce Salad) (France) Source: Encyclopedia of European Cooking 1 lettuce 1 teaspoon chopped chives 1/2 clove garlic pinch sugar 1 dessertspoon (2 1/2 tsp) wine vinegar pinch salt black pepper 1/2 teaspoon chopped tarragon 1 saltspoon (1/4 tsp) mustard 3 dessertspoons (7 1/2 tsp) olive oil Wash a fresh young lettuce, dicard the outer leaves. Dry it thoroughly with a clean dish cloth and hang it in a salad basket to dry further. Rub one half clove of garlic with a pinch of salt in the salad bowl. Mix the oil, tarragon, chives, mustard, black pepper and sugar. Put the dry crisp lettuce in the bowl. cover with the dressing, toss well with wooden salad spoon and fork.
