Guest guest Posted May 19, 2007 Report Share Posted May 19, 2007 Salade de Haricots Vert et Tomates (Green Bean and Tomato Salad) (France) 1 lb (450 g) French -OR- runner beans 8 oz (225 g) tomatoes 3 tablespoons (45 ml) olive oil 1 tablespoon (3 tsp) white wine vinegar salt and black pepper 1/2 clove garlic Top and tail the beans and remove strings, if any. Get three cupfuls of water boiling fast in a saucepan, add salt. Cut up the beans into 1 " (2.5 cm) pieces and boil them for 10 minutes with the lid on. Drain and cool. Cut the tomatoes in quarters and quarter them again. Crush the garlic with salt around a wooden salad bowl. Add the olive oil and vinegar, pepper, and mix well.
