Guest guest Posted May 19, 2007 Report Share Posted May 19, 2007 Okra me Melitsymes (Ladies Fingers with Aubergines {Eggplant}) (Greece) Source: Encyclopedia of European Cooking 1 Ib (450 g) ladies' fingers (okra) 1 large aubergine (eggplant) 1 onion 1 gill (5 fl oz) (140 ml) olive oil 2 large tomatoes 1 tablespoon (3 tsp) chopped parsley salt and pepper Wash the ladles fingers and cut off the stems. Peel and quarter the tomatoes and peel and dice the aubergine. Chop the onion and fry in the oil until golden brown then add the ladies' fingers, tomatoes, aubergine, parsley, salt and pepper.
