Okra me Melitsymes (Ladies Fingers with Aubergines {Eggplant}) (Greece)

1 Ib (450 g) ladies' fingers (okra)

1 large aubergine (eggplant)

1 onion

1 gill (5 fl oz) (140 ml) olive oil

2 large tomatoes

1 tablespoon (3 tsp) chopped parsley

salt and pepper

 

 

Wash the ladles fingers and cut off the stems. Peel and quarter the

tomatoes and peel and dice the aubergine. Chop the onion and fry in

the oil until golden brown then add the ladies' fingers, tomatoes,

aubergine, parsley, salt and pepper. Mix well, cover and cook gently

for about 30 minutes.
