Guest guest Posted May 18, 2007 Report Share Posted May 18, 2007 Champignons de Paris (Paris Mushrooms) (France) Source: Encyclopedia of European Cooking 8 oz (225 g) button mushrooms juice 1 1/2 lemons 2 tablespoons (30 ml) olive oil 1 teaspoon chopped parsley 1 teaspoon French mustard salt and black pepper Clean the mushrooms and put, whole, into an enamel saucepan, with the lemon juice, olive oil, and pinch of salt and black pepper. Cook on a fast heat for 10 minutes. Let the mushrooms cool in this sauce. When cold, remove them and place them on a serving plate.
