Champignons de Paris (Paris Mushrooms) (France)

8 oz (225 g) button mushrooms

juice 1 1/2 lemons

2 tablespoons (30 ml) olive oil

1 teaspoon chopped parsley

1 teaspoon French mustard

salt and black pepper

 

 

Clean the mushrooms and put, whole, into an enamel saucepan, with the

lemon juice, olive oil, and pinch of salt and black pepper. Cook on

a fast heat for 10 minutes. Let the mushrooms cool in this sauce. When

cold, remove them and place them on a serving plate. Stir the mustard

into the sauce, pour it over 'tiafe mushrooms, sprinkle with parsley and

serve.

 

 

6 servings.
