Pommes de Terre Sautees (Saute Potatoes) (France)

6 medium potatoes

4 oz (120 ml) oil

salt

black pepper

 

 

I the potatoes in their jackets in salted water. Remove them and, when

they are cool enough, peel off the skins gently. Put the oil in frying

pan and when sizzling hot, put in the potatoes, cut into rounds about

1/4 inch (6 mm) thick. Fry until they are golden, but, not brown.

Sprinklfc with salt and black pepper and serve.
