Guest guest Posted May 17, 2007 Report Share Posted May 17, 2007 Stuffed Vine Leaves (Dolma) (Turkey) 3 dozen vine leaves 1 medium onion, finely chopped 2 oz (57 g) rice (cooked) 1 1/2 tablespoons (4 1/2 tsp) olive oil salt and pepper juice 3 lemons 1/2 (English) pint (10 fl oz)(300 ml) tomato juice Throw the leaves into boiling salted water and boil for 3 minutes. Drain. Heat the oil and fry the onions till golden brown. Remove from heat. Mix the onions and the oil with the cooked rice; add salt and pepper. Put 1 teaspoon of this mixture on tlie smooth side of each leaf, fold up into a little parcel, squeeze in the palm of the hand. Pack the stuffed leaves tightly in a shallow fireproof dish, sprinkle with the lemon juice and pour in the tomato juice. Put a plate on top to prevent them moving about and simmer for 30 minutes.
