Guest guest Posted May 6, 2007 Report Share Posted May 6, 2007 Scalloped Potatoes Source: The Genesis Diet Cookbook 2 cups brown rice, cooked (2/3 cup dry plus 2 1/8 cups water) 3 1/2 cups water salt to taste 8 cups potatoes, peeled and thinly sliced 2 medium onions, thinly sliced Place sliced potatoes in an 8 " x 12 " baking dish. Blend rice, water, and salt. Pour over potatoes. Bake at 375 degrees for one hour. Stir in the onions. Bake for another hour and serve.
