Guest guest Posted May 6, 2007 Report Share Posted May 6, 2007 Pineapple Pudding Source: The Genesis Diet Cookbook 2 cups millet, cooked (1/2 cup dry plus 1 1/2 cups water) 1 1/3 cups unsweetened pineapple juice 3 Tbsp. raw honey (or vegan alternative; Fruit Source, agave syrup, maple syrup) 1 tsp. powdered vanilla 2 Tbsp. arrowroot powder 3/4 cup unsweetened crushed pineapple Blend first five ingredients. Pour into medium saucepan and heat on medium until thickened, stirring constantly. Pour into bowl and fold in crushed pineapple. Chill to finish thickening. May garnish with a cherry or berry.
