Guest guest
Microwave Strawberry Jam Use top quality strawberries for best results. You can also use a 500 g (17 1/2 oz) packet of frozen mixed berries, but add a cored and finely diced unpeeled green apple to supply pectin to set the jam. Stir through 1 to 2 tablespoons brandy or GF liqueur just before bottling if you like. 500 g (17 1/2 oz) perfect ripe strawberries 1/4 cup fresh lemon juice 1 1/2 cups sugar 1. Hull and quarter strawberries. Place in a large microwave-safe bowl; add juice. Cook on HIGH (100%) for 4 minutes. Add the sugar; stir well to dissolve. Cook for 20 minutes, stopping and stirring every 5 minutes until jam thickens. 2. Jam is ready when a teaspoonful sets after cooling slightly on a cold saucer (see tips). Pour into hot sterilised jars; seal and label. Store in a cool, dark place. Refrigerate once opened. Makes 2 cups.
