Fresh stinging nettles

My children harvested fresh stinging nettles yesterday which we steamed

and put in our vegan gluten-free lasagna. We used the Tinkyada Brown

Rice lasagna noodles without pre-cooking them. If anyone is interested

in the recipe I could type it out. It was great! We served the

stinging nettle lasagna with steamed nettles,a dandelion salad, wild

onions, and carrot sticks. All five of my children love these fresh

wild greens! We'd like to make a vegan/gf pizza next, which we would

put a pimento/cashew cheese, tomato sauce, chopped wild onions, steamed

stinging nettles, and maybe a little shredded carrot on it.

 

Does anyone else have any recipes using stinging nettles?

I would love to have your recipes for the lasagna, and dandeion salad. Also let

me know how the pizza turns out I would like to have that recipe also.
