Hummus & Rocket Toast

 

 

If you need a more substantial meal, add 1 or 2 falafel, halved or

sliced, to each piece of toast; the dish is delicious warm or cold.

 

 

four 10 cm (4 " wide) wide pieces GF Turkish bread, pide or foccacia

250 g (9 oz) tub hummus (-OR- make your own)

lOO g (3 1/2 oz) baby rocket (arugula)

1/2 cup char-grilled marinated capsicum (bell pepper), drained

12 marinated olives, drained and pitted

 

 

1. Preheat oven-grill to moderate. Grill bread until pale golden on

both sides. Place on serving plates; thickly spread with hummus.

 

2. Place rocket, capsicum (bell pepper) and olives in a bowl; lightly

toss to combine. Pile mixture on toast. Sprinkle with black pepper.

 

 

Serves 4.

where do you find or how do you make GF turkish bread?

I've been trying to find a recipe but haven't had much success. You

could probably use a sour dough recipe and make that into a flattish loaf.

 

I have seen mention of GF turkish bread on the web, but have no idea

where to find it.
