Mango, Strawberry & Grapefruit Chiller

 

 

Freeze glasses to frost them before they're needed. If fresh mango is

not available, use drained, canned mango slices instead. You can puree

fruit in advance if you like; cover and chill until it's needed.

 

 

pulp of 2 mangoes

250 g (9 oz) strawberries, halved

3 cups ruby red grapefruit juice, chilled

12 ice-cubes, plus extra crushed ice-cubes, to serve

sparkling vegan wine -OR- sparking mineral water, optional

 

 

1. Place mango in a blender; add berries, grapefruit juice and ice

cubes. Blend until smooth. Chill until needed.

 

2. Pour mixture into chilled glasses; add some crushed ice, then top

up with wine or mineral water.

 

 

Makes 7 cups to serve 6.
