Guest guest Posted April 30, 2007 Report Share Posted April 30, 2007 Primavera Pasta Sauce 2 tablespoons (8 tsp) olive oil 2 garlic cloves, finely chopped 1 brown (yellow) onion, finely chopped 2 zucchini, halved crossways, cut into thin strips lengthways 1 bunch asparagus, cut into 5 cm (2 " ) pieces 1/3 cup chicken-style -OR- vegetable stock 100 g (3 1/2 oz) snow peas, trimmed, halved diagonally 2 vine-ripened tomatoes, chopped salt and pepper, to taste extra-virgin olive oil, to serve 1. Heat olive oil in a large frying pan over medium heat. Add garlic, onion and zucchini. Cook for 3 minutes. Add asparagus and stock. Cook for 2 to 3 minutes or until asparagus is just tender. Add snow peas. Cook for 1 minute. 2. Add vegetable mixture, tomatoes and salt and pepper to pasta. Toss to combine. Drizzle with extra-virgin olive oil. Serve. Serves 4.
