I just want to point out that it calls for " Minute tapioca " and wanted to let you all know that they recently started adding soy lecethin to the tapioca! Idiots! That is so unnecessary! Thanks for the 'heads up'. BTW, I love this recipe and am glad you are enjoying it as well. I've used it for many years (since before the gluten free days). My thickener of choice in this recipe is garbanzo/fava bean flour. It works pretty good and the flavors seem to go. I'm glad there are alternatives for the loaf, but it's too bad about the other foods you enjoy that need tapicoa. Does anyone know --- if the regular tapioca purchased in Asian markets (the pure stuff) could be made into the 'minute' version by blending it or putting it in a food processor to break up the beads? Guest guest Posted April 20, 2007 Report Share Posted April 20, 2007 Sago (aka cassava or tapioca) comes in all sorts of size from broken pieces to what we used to call salmon eggs (or pearls) and should be readily available in most groceries without any additions. Minute Tapioca is simply sago broken up to cook quickly. A friend of mine was at the local wholesale store recently and found 20 bags of pearls in the mark down at the back of the store - she bought them all and gave them to me! Try cracking the tapioca in your coffee bean grinder and making your own " minute " tapioca.
