Guest guest Posted April 18, 2007 Report Share Posted April 18, 2007 Millet Pudding Source: Lifestyle Centers of America 3/4 cup uncooked millet 3 cups soy milk (or alternative non-dairy milk) 1/4 cup liquid sweetener of choice 1/2 cup coconut 1 tsp. salt 1 tsp. vanilla Combine all ingredients in a greased casserole dish. Cover and bake at 350 degrees F. for 1 - 1 1/2 hours or until millet is tender. Stir halfway through the baking process. Bake uncovered for the last 20 minutes. Serve plain or with fruit or soy milk.
