Guest guest Posted April 18, 2007 Report Share Posted April 18, 2007 Chili Source: Lifestyle Centers of America (adapted to GF) 2 Tbsp. olive oil 2 cups yellow onions, chopped 1/3 cup green bell pepper, chopped 4 garlic cloves, minced 3 Tbsp. chili powder 2 tsp. cumin, ground 1/3 tsp. cayenne pepper, optional 1/4 tsp. oregano 1 tsp. paprika 1 can pinto beans, with liquid 1 can red kidney beans 1 can black beans 2 cans diced tomatoes 1/3 cup tomato paste 3 Tbsp. green chilies, mild, chopped In a large saucepan over low heat, warm the oil. Add the onions, green peppers, and garlic. Saute, stirring until the onions are soft. Add the seasonings and saute, stirring for about one minute over low heat. Bring the mixture to a boil and reduce the heat to a simmer. Add salt to taste. Serve in a bowl, garnish with tofu sour cream and fresh cilantro leaves, chopped.
