Guest guest Posted April 16, 2007 Report Share Posted April 16, 2007 Simple Spanish Rice 1/2 cup chopped green pepper 1 medium tomato, peeled, seeded and diced 1/4 cup finely chopped onion 1 tablespoon vegetable oil 1/2 cup uncooked long grain rice 1 cup chicken-style broth (water and Bill's Best Chicknish) 1/2 teaspoon salt, optional In a saucepan, saute green pepper, tomato and onion in oil until tender. Add rice; cook and stir for 2 minutes. Stir in broth, salt if desired and pepper; bring to a boil. Reduce heat; cover and simmer 25 minutes or until rice is tender. Yield: 2 servings.
