Guest guest Posted April 13, 2007 Report Share Posted April 13, 2007 Herb Roasted Sweet Potatoes 4 medium sweet potatoes, peeled and cut into 1 1/2 " (38 mm) rounds 3 tablespoons (9 tsp) olive oil 1 tablespoon (3 tsp)fresh thyme, chopped 3 to 5 sprigs thyme (to garnish) 3 garlic cloves, minced 1/2 teaspoon crushed red pepper flakes 1. Heat oven to 400 degrees F (205 C). 2. In a zip lock bag toss the sweet potatoes in the oil, thyme, garlic and pepper flakes. 3. Transfer to a rimmed cookie sheet. 4.
