Guest guest Posted April 13, 2007 Report Share Posted April 13, 2007 Glazed Vanilla Plums 1/4 cup flaked almonds 2 tablespoons (8 tsp) brown sugar 6 blood plums, halved, stone removed (see note) 1/2 teaspoon vanilla extract 1/2 cup soy vanilla yoghurt 1. Heat a non-stick frying pan over medium heat. Add almonds and cook, stirring often, for 2 to 3 minutes or until light golden. Transfer to a plate and set aside. 2. Reduce heat to low. Add sugar and 1/4 cup cold water to frying pan. Cook, stirring, for 2 minutes or until sugar is dissolved. Bring to a simmer. Cook for 2 to 3 minutes or until sauce reduces and is syrupy. Add plums. Cook, carefully turning plums occasionally, for 3 minutes or until plums are heated through and glazed. Stir in vanilla. 3. Spoon plums and syrup into bowls. Sprinkle with almonds. Serve warm or cold with yoghurt. NOTE: You could use canned plums in juice instead of fresh. Drain plums and pat dry with paper towel before adding to syrup in step 2. TIP: Replace the brown sugar with maple syrup and add a pinch of ground cinnamon or nutmeg. This syrup is also delicious spooned over peaches, nectarines or canned pears. Serves 4.
