Asparagus Salad

 

 

1 bunch asparagus, trimmed, thinly sliced

150 g (5 1/3 oz) green beans, trimmed

1 red onion, halved, thinly sliced

2 garlic cloves, finely chopped

1 tablespoon (4 tsp) olive oil

1/2 cup flaked almonds, toasted

 

 

1. Bring a saucepan of water to the boil over high heat. Add asparagus

and green beans. Cook for 2 minutes or until bright green and tender.

Drain and refresh under cold water. Pat dry with paper towels.

 

2. Place asparagus, green beans, onion, garlic, oil and almonds in a

bowl. Toss to combine.

 

 

Serves 4.
