Guest guest Posted April 13, 2007 Report Share Posted April 13, 2007 Tomato and Apple Chutney 1 tablespoon (4 tsp) olive oil 1 small brown (yellow) onion, finely chopped 1 large garlic clove, crushed 1/2 teaspoon salt 750 g (26 1/2 oz)(8 medium) roma tomatoes, chopped 425 g (15 oz) can apple pie fruit, roughly chopped 1 1/4 cups white sugar 2/3 cup cider vinegar 1. Combine oil, onion, garlic and salt in a large, heatproof, microwave-safe bowl. Microwave, uncovered, on HIGH (100%) for 3 minutes or until onion is tender. 2. Add tomatoes, apple, sugar and vinegar to mixture. Stir until well combined. Microwave, uncovered, on HIGH (100%) for 4 minutes, stirring every minute, or until sugar dissolves. Microwave on HIGH (100%) for a further 25 to 30 minutes, stirring every 10 minutes, or until thick and pulpy. 3. Spoon hot chutney into hot sterilised jars. Seal. Turn upside down for 2 minutes.
