Guest guest Posted April 12, 2007 Report Share Posted April 12, 2007 Peach chutney 1 tablespoon (4 tsp) olive oil 1 small red onion, finely chopped 2 garlic cloves, crushed 2 cinnamon sticks, halved lengthways 1/4 teaspoon salt 875 g (31 oz)(6 medium) peaches, peeled, chopped 1/2 cup cider vinegar 1 lime, juiced 1 cup white sugar 1/2 cup brown sugar 1/4 cup sweet chilli sauce 1. Combine oil, onion, garlic, cinnamon sticks and salt in a large, heatproof, microwave-safe bowl. Microwave, uncovered, on HIGH (100%) for 2 minutes or until onion is tender. 2. Add peaches, vinegar, 2 tablespoons (8 tsp) lime juice and sugars to mixture. Microwave, uncovered, on HIGH (100%) for 4 minutes, stirring every minute, or until sugar dissolves. Microwave on HIGH (100%) for a further 20 to 25 minutes, stirring every 10 minutes, or until thick and pulpy. Stir in sweet chilli sauce. 3. Spoon hot chutney into hot sterilised jars. Seal.
