Peach chutney

 

 

1 tablespoon (4 tsp) olive oil

1 small red onion, finely chopped

2 garlic cloves, crushed

2 cinnamon sticks, halved lengthways

1/4 teaspoon salt

875 g (31 oz)(6 medium) peaches, peeled, chopped

1/2 cup cider vinegar

1 lime, juiced

1 cup white sugar

1/2 cup brown sugar

1/4 cup sweet chilli sauce

 

 

1. Combine oil, onion, garlic, cinnamon sticks and salt in a large,

heatproof, microwave-safe bowl. Microwave, uncovered, on HIGH (100%)

for 2 minutes or until onion is tender.

 

2. Add peaches, vinegar, 2 tablespoons (8 tsp) lime juice and sugars

to mixture. Microwave, uncovered, on HIGH (100%) for 4 minutes,

stirring every minute, or until sugar dissolves. Microwave on HIGH

(100%) for a further 20 to 25 minutes, stirring every 10 minutes, or

until thick and pulpy. Stir in sweet chilli sauce.

 

3. Spoon hot chutney into hot sterilised jars. Seal. Turn upside down

for 2 minutes. Turn upright. Allow to cool.

 

 

Makes 2 1/2 cups.
