Guest guest Posted April 12, 2007 Report Share Posted April 12, 2007 Hot Fruit Parcels 2 ripe nectarines, cut into Icm-thick slices 2 bananas, cut into 2 cm (3/4 " ) thick slices 250 g (9 oz) strawberries, hulled, halved 2 tablespoons (8 tsp) honey (-OR- vegan alternative) 1/3 cup vanilla soy yoghurt 1. Preheat barbecue plate on medium heat. Cut four 30 cm x 40 cm (12 x 16 " ) pieces of foil. Fold each piece in half. Place one-quarter of the nectarines, bananas and strawberries in centre of each piece of foil. Drizzle each with 1 teaspoon honey. Fold foil over fruit to cover. Fold up edges to enclose. 2. Place fruit parcels on barbecue plate and cook for 4 to 5 minutes or until fruit is warmed through. 3. Remove parcels from heat. Carefully open 1 side of parcels to allow to cool slightly. Spoon fruit mixture into bowls. Top each with a tablespoon (4 tsp) yoghurt and drizzle with 1 teaspoon honey. Serve.
