Saffron Herbed Rice

 

 

1 cup basmati rice, rinsed

1 tablespoon (4 tsp) saffron threads

1/4 cup flat-leaf parsley leaves, chopped

1/4 cup mint leaves, chopped

1 lemon, rind finely grated

 

 

Bring 2 cups lightly-salted water to the boil. Add rice and saffron.

Stir with a fork to separate grains. Return to the boil. Cover with a

lid. Reduce heat to low. Simmer for 10 minutes. Remove from heat (do

not remove lid). Stand for 5 minutes. Stir in parsley, mint and lemon

rind. Cover to keep warm.

 

 

Serves 4.
