Guest guest Posted April 8, 2007 Report Share Posted April 8, 2007 Summer Fruit Salad 1/2 cup honey (-OR- vegan alternative) 2 large limes, rind finely grated, juiced 1 vanilla bean, halved lengthways 4 freestone peaches, halved, stones removed 4 freestone nectarines, halved, stones removed 4 small plums, halved, stones removed 3 mangoes, peeled, diced 250 g (9 oz) small strawberries, hulled, halved 250 g (9 oz) cherries 150 g (9 oz) blueberries 1. Combine 1 cup water, honey (or alternative), lime rind and 1/3 cup lime juice in a saucepan. Scrape seeds from vanilla bean. Add seeds and beans to pan. Place over high heat and bring to the boil. Reduce heat to medium-low and simmer for 5 minutes. Remove from heat. Transfer to a heatproof bowl or jug. Refrigerate until chilled. Remove vanilla beans. 2. Cut peaches, nectarines and plums into thick wedges. Place in a large bowl. Add mango, strawberries, cherries and blueberries. Pour chilled syrup over fruit and stir gently to combine. Refrigerate until ready to serve. VARIATION: For an adult version, add 1/3 cup chilled vodka to the chilled syrup before pouring over fruit. Serves 8.
