Orange Chickpea Dip

 

 

400 g (14 oz) can chickpeas (garbanzo beans), drained and rinsed

1 orange, rind finely grated, juiced

2 tablespoons (8 tsp) extra-virgin olive oil

1 garlic clove, crushed

1 tablespoon(4 tsp) tahini

4 green onions, thinly sliced

salt and pepper, to taste

 

 

Combine chickpeas, orange rind, 1/3 cup orange juice, oil, garlic,

tahini and green onion in a food processor. |Process until smooth.

Transfer to a bowl. Season with salt and pepper. Cover and refrigerate

overnight to allow flavours to develop.
