Guest guest Posted April 8, 2007 Report Share Posted April 8, 2007 Watermelon, Strawberry and Lime Granita 1/2 cup white sugar 2 limes, juiced 1/4 large seedless watermelon, peeled, chopped 375 g (13 1/4 oz) strawberries, hulled 1. Combine sugar and 1/2 cup water in a small saucepan over medium-high heat. Cook, stirring, for 5 minutes or until sugar dissolves. Remove from heat. Stir in 1/3 cup lime juice. Set aside to cool completely. 2. Process watermelon, in batches, in a food processor until smooth. Strain watermelon into a large bowl (you should have 8 cups juice). Process strawberries until smooth. Stir into watermelon juice with the cooled lime syrup. Pour mixture into a 3-litre airtight container. Cover, Freeze for 4 to 6 hours or until partially set. 3. Using a fork, flake granita to break up ice crystals. Cover and freeze for 4 hours or until completely frozen. Using a fork, flake granita again. Return to freezer. 4. Flake granita again 30 minutes before serving and return to freezer. Spoon into chilled cups or glasses. Serve immediately. TIP: When you return the granita to the freezer in step 4, place glasses in the freezer to chill. This will help to keep the granita from melting quickly on a hot day. Serves 8.
