Guest guest Posted April 2, 2007 Report Share Posted April 2, 2007 Coconut Rice 3 cups jasmine rice, well-rinsed 400 ml (13 1/2 fl oz) can coconut cream 3 cm (2 1/4 " ) piece ginger, peeled, sliced Place all ingredients in a large saucepan over high heat. Bring to the boil, stirring occasionally. Reduce heat to low. Simmer, covered, for 10 minutes. Remove from heat. Stand, covered, for 10 minutes. Discard ginger. Serve. Serves 6.
