Guest guest Posted March 21, 2007 Report Share Posted March 21, 2007 Macadamia Toffee Fruit 2 cups vegan vanilla custard 12 pieces stone fruit (such as apricots, peaches, nectarines and cherries) 1 1/2 cups white sugar 1/3 cup macadamia nuts, chopped 1. Spoon custard into the base of a 5 cm (2 " ) deep, 24 cm (10 " )(base) square baking dish. Cover. Refrigerate until ready to serve. 2. Cut fruit in half and remove stones, leaving cherries intact. Set fruit aside. 3. Place sugar into a non-stick frying pan over low heat. Heat, tilting pan gently back and forth every few minutes, until sugar melts and becomes deep golden in colour. Remove from heat. 4. Add macadamia nuts to toffee. Tilt pan to coat nuts. Arrange fruit over custard. Pour macadamia toffee evenly over fruit. Allow to set before serving. Serves 6.
