Guest guest Posted March 20, 2007 Report Share Posted March 20, 2007 Vegetarian Burgers 400 g (14 oz) can chickpeas, rinsed, drained 1/3 cup pine nuts 3 slices GF multi-grain bread 2 garlic cloves, crushed 400 g (14 oz) carrots, peeled, grated 1/2 cup fresh basil leaves, shredded 2 tablespoons (8 tsp) GF flour 1/4 cup thick natural soy yoghurt 1 loaf GF Turkish bread, cut into 4 (-OR- similar GF bread -OR- GF rolls) 2 tablespoons (8 tsp) olive oil coleslaw and rocket leaves, to serve 1. Process chickpeas, pine nuts, bread and garlic in a food processor until combined. Transfer to a large bowl. 2. Add carrots, basil, flour, soy yoghurt, and salt and pepper to chickpea mixture. Mix. 3. Shape into 4 patties. Refrigerate for 30 minutes. Split bread in half. 4. Heat oil in a frying pan over medium heat. Cook patties for 8 minutes each side, or until golden and cooked through. 5. Top bread bases with coleslaw, patties and rocket. Cover with bread tops. Serve. Serves 4.
