Guest guest Posted March 19, 2007 Report Share Posted March 19, 2007 Lemon and Thyme Roast Potatoes 2.5kg (about 48) chat potatoes olive oil cooking spray Lemon and thyme seasoning ; 2 tablespoons (8 tsp) sea salt flakes 2 lemons, rind finely grated 3 teaspoons lemon pepper 1 tablespoon (4 tsp) thyme leaves 1. Grease and line 2 baking trays. Place potatoes into a large saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium-low. Simmer, uncovered, for 15 minutes or until just tender. Drain. Cool for 5 minutes. 2. Make lemon and thyme seasoning Place all ingredients into a mortar and pestle, food processor or blender. Grind or process until well combined. 3. Preheat oven to 230 C (445 F). Place potatoes onto prepared baking trays, in a single layer. Using the heel of your hand, press on each potato to flatten slightly. Spray with oil. Sprinkle with seasoning. Roast for 20 minutes or until golden and crisp. Serve. Serves 12.
