Guest guest Posted March 18, 2007 Report Share Posted March 18, 2007 Spiced Mushrooms 500 g (17 /1/2 oz) button mushrooms 1/2 cup olive oil 1 teaspoon ground cardamom 1 teaspoon ground black pepper 1 teaspoon ground nutmeg 1 teaspoon ground cumin 1 teaspoon ground coriander 1 teaspoon ground turmeric natural soy yoghurt, to serve coriander (cilantro) leaves, to serve 1 cup unsalted roasted peanuts, chopped, to serve 1. Place mushrooms into a ceramic bowl. 2. Combine 1/3 cup of oil, cardamom, pepper, nutmeg, cumin, coriander and turmeric in a jug. Pour mixture over mushrooms. Toss well to coat. Set aside to marinate for 15 minutes. 3. Heat a wok over high heat until hot. Add remaining 2 tablespoons of oil and mushrooms. Stir-fry for 3 to 4 minutes or until golden and just tender. 4.
