Chocolate Balls: 1/2 cup gluten free peanut butter chips 1/4 cup margarine 1 cup confectioner's sugar 1/2 cup chopped dates 1/4 cup gluten free white chocolate chips 1/2 cup chopped walnuts (but I don't use those) 2 Tbsp orange juice 1 Tbsp orange rind 2 cups gluten free crispy rice cereal 6 squares semi-sweet baking chocolate Melt the pb chips and butter in a double boiler, set aside to cool. In a large bowl, combine the sugar, dates, walnuts, and white chocolate chips. Mix thoroughly so that all the date bits are covered with sugar. Add orange juice and rind to the butter mixture, then blend into the date mixture. Fold in the cereal. With wet hands, form into 1 inch balls, and chill in the frige.
