Guest guest Posted March 17, 2007 Report Share Posted March 17, 2007 Sun-Dried Tomato and Chive Potato Mash 100 g (3 1/5 oz) sun-dried tomatoes, finely chopped 1/3 cup lemon juice 1 kg (2 1/4 lb) Desiree potatoes, peeled, chopped into 5 cm (2 " ) pieces 50 g (1 3/4 oz) vegan margarine, chopped 1/4 cup milk substitute 1/4 cup finely chopped fresh chives salt and pepper, to taste 1. Combine tomatoes, lemon juice, and salt and pepper in a small bowl. Set aside while potatoes are cooking. 2. Place potatoes into a saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Simmer, uncovered, for 25 minutes or until tender. 3. Drain potatoes and return to saucepan. Shake gently over low heat until any remaining water evaporates. Add margarine and milk substitute. Mash until smooth. Add tomato mixture and chives. Stir until well combined. Season with salt and pepper. Serves 4.
