Guest guest Posted March 17, 2007 Report Share Posted March 17, 2007 Classic Mashed Potato (veganized) 800 g (1 3/4 lb) Spunta, Sebago or Coliban potatoes 40 g (1 1/2 oz) vegan margarine, chopped 1/3 cup hot milk substitute (see note) extra vegan margarine, to serve 1. Peel potatoes and cut into large chunks. Cook in a large saucepan of boiling salted water for 20 minutes or until very tender but not falling apart. 2. Drain potatoes well. Return to saucepan over low heat. Shake pan gently until any remaining water evaporates. Using a potato masher, roughly mash potatoes. 3. Add margarine and hot milk substitute to potatoes.
