Guest guest Posted March 17, 2007 Report Share Posted March 17, 2007 Sweet Spiced Roast Carrots 1 tablespoon (4 tsp) olive oil 2 tablespoons (8 tsp) honey (-OR- vegan alternative) 1 teaspoon ground cumin 1/2 teaspoon ground coriander 800 g (28 oz) carrots, trimmed, peeled,halved lengthways olive oil cooking spray 1. Preheat oven to 220 C (430 F). Place oil, honey (or alternative), cumin, coriander, and salt and pepper into a large bowl. Mix well to combine. Add carrots. Toss well to coat in spice mixture. Spray a roasting pan with oil. Place roasting pan into oven for 3 minutes to heat. 2. Add carrots and spice mixture to roasting pan.
