Guest guest Posted March 12, 2007 Report Share Posted March 12, 2007 Baby Carrots with Orange Spice Dressing 1 orange, rind finely grated, juiced 1/4 cup currants 2 bunches baby carrots 1/4 cup extra virgin olive oil 1 teaspoon ground cumin 1/4 teaspoon ground paprika 1. Place orange juice into a small microwave-safe bowl. Cover with plastic wrap. Heat for 1 minute on HIGH (100%) power, or until hot. Carefully remove wrap. Add currants. Set aside for 5 minutes. 2. Wash carrots and place in a single layer onto a microwave-safe plate. Cover with plastic wrap. Cook for 3 to 4 minutes on HIGH (100%) power, or until just tender. 3. Meanwhile, combine currants and juice, oil, cumin, paprika, and salt and pepper in a screw-top jar. Shake well to combine. 4. Drain carrots. Pour dressing over carrots and toss to coat. Serve.
