Guest guest Posted March 12, 2007 Report Share Posted March 12, 2007 Herb and Garlic Potatoes 6 large (1.2 kg) (2 1/2 lb) desiree potatoes, unpeeled Dressing: 1/4 cup extra virgin olive oil 1 1/2 tablespoons (6 tsp) red wine vinegar 2 garlic cloves, crushed 1/4 cup flat-leaf parsley, chopped 2 tablespoons (8 tsp) mint leaves, chopped 1 teaspoon Dijon mustard 1/2 teaspoon caster (superfine granulated) sugar 1. Wash potatoes. Cut into 3 cm (1 1/4 " ) pieces. With water clinging, arrange in a shallow microwave-safe dish so they are 2 layers deep. Cover and cook on HIGH (100%) power for 10 minutes, or until almost tender. Remove from microwave. Cover with a sheet of foil and stand for 8 minutes to complete cooking. 2. Make dressing Combine oil, vinegar, garlic, parsley, mint, mustard, sugar, and salt and pepper in a screw-top jar. Shake well to combine. 3. Drain potatoes. Place into a bowl. Pour over dressing.
