Guest guest Posted March 10, 2007 Report Share Posted March 10, 2007 Cos (Romaine) Salad 1 cup pine nuts 2 cos (romaine) lettuces, leaves separated, washed, dried, thinly shredded 8 green onions, thinly sliced 3/4 cup fresh dill, roughly chopped Dressing: 1/2 cup extra virgin olive oil 2 1/2 tablespoons (10 tsp) red wine vinegar 1 teaspoon caster (superfine granulated) sugar 1. Place nuts into a frying pan. Cook over medium-high heat, tossing, for 4 to 5 minutes or until golden. Cool. 2. Place lettuce into a bowl. Add onions, dill and nuts. Toss. 3. To make dressing: Combine all ingredients in a screw-top jar. Shake well. Just before serving, pour over salad. Toss. Serve. Serves 10.
