Guest guest Posted March 9, 2007 Report Share Posted March 9, 2007 Spicy Barbecued Asparagus 1/4 cup olive oil 1 tablespoon (4 tsp) balsamic vinegar 1 teaspoon ground cumin 1 teaspoon ground coriander 1 garlic clove, crushed 2 bunches asparagus, ends trimmed 1. Combine oil, vinegar, cumin, coriander and garlic in a screw-top jar. Shake well. 2. Place asparagus in a single layer in a shallow dish. Pour over dressing. Turn asparagus to coat in dressing. 3. Preheat a large frying pan on high heat. Add asparagus and cook, turning occasionally and basting with dressing, for 3 to 4 minutes or until asparagus is just tender. Serve drizzled with any leftover dressing.
